Red rice red is extracted from the Oryza sativa of the Gramineae plant. The pigment is mainly composed of anthocyanidins
Properties: Red rice red is a red powder or liquid, which easily dissolves in alcohol and water, but not in acetone and fat solvent. The pigment’s resistance to light and heat is good, but not to oxidisation. Na、K、Ca、Ba、Zn、Cu and micro Fe do not affect the pigment, but become rose to Sn, depigment and deposition to Pb and much Fe2+. The pigment turns a weak brown color in PH 7—12, and turns yellow if heated over a long period of time. The pigment is applicable in the coloring of drinks, ice cream, candy, and jelly.
